Except that crazy baker.
Tonight Mr Canbella was away for business so I thought I would do some experimental love themed baking in honour of Valentine's Day tomorrow. :)
Valentine's Cupcakes
Makes 6 cupcakes
Cakes
1/4 cup Nuttelex Olive Oil Spread
1/8 cup Natvia for Baking
1/4 cup brown sugar
1 tsp vanilla bean paste
1/4 cup dutch processed cocoa
1 egg
2/3 cup SR Cake Flour
1/4 cup milk
Frosting
3 Tbs Nuttelex Olive Oil Spread
2 Tbs milk
1 tsp vanilla bean paste
1 tsp rose water essence
1 - 1 1/2 cups icing sugar mixture
Red colouring (I used Wilton)
1. Pre-heat oven to 180 C.
2. Using an electric mixer, beat the Nuttelex, Natvia, sugar, vanilla bean paste, and cocoa until smooth.
3. Add the egg and beat on a low speed until combined.
4. Add the flour and milk in small amount, alternating and beating until combined.
5. Spoon mixture into 6 patty pan cases, bake for 12 - 15 until they bounce back when pressed and a skewer comes out dry.
6. Remove from oven, cool for a few minutes in the pan and then cool on a rack.
7. Beat together all of the frosting ingredients, adding enough icing sugar mixture to make the mixture firm. Add colouring as desired.
8. Serve with love!
