So the 2 or 3 ingredients super healthy banana cookie recipe is getting heavy circulation around the interwebs at the moment. This is my version.
I have added PB2 and dates to make the cookies more flavourful. I think they are great additions. These cookies are still super easy to make and are still very healthy and nutritious.
Banana Oat PB2 Cookies
4 dates, soaked in 1/3 cup boiling water
2 over ripe bananas
1/2 cup PB2 powdered peanut butter
1 cup rolled oats
1/4 cup walnuts
1/4 cup chocolate chips
1. Preheat oven to 180C. Using a handheld food processor, blend the dates with the water and bananas until smooth.
2. Stir in PB2, oats, walnuts and chocolate chips.
3. Spoon mixture onto lined baking trays and spread out into cookie shapes.
4 Bake for 15minutes or until browned.
5. Cool on trays.
